# Directions:
01 - Place the rolled oats into a blender or food processor and pulse until a coarse flour forms.
02 - Add bananas, eggs, milk, vanilla extract, baking powder, salt, and cinnamon to the blender. Blend until the mixture is smooth and thick.
03 - Allow the batter to rest for 2 to 3 minutes to thicken slightly.
04 - Preheat a non-stick skillet or griddle over medium heat; lightly grease with butter or oil.
05 - Pour approximately 1/4 cup of batter per pancake onto the skillet. Cook for 2 to 3 minutes until bubbles form on the surface and edges appear set.
06 - Carefully flip each pancake and cook an additional 1 to 2 minutes until golden and cooked through.
07 - Continue cooking remaining batter, adding more butter or oil to the skillet as needed.
08 - Serve pancakes warm with desired toppings such as sliced fruit, maple syrup, or yogurt.
