- In a large mixing bowl, combine the rolled oats, chopped dried cherries, finely chopped almonds, and shredded coconut.
- Add the almond butter, honey (or maple syrup), vanilla extract, and sea salt to the bowl. Mix thoroughly until the ingredients are well combined and form a cohesive, slightly sticky mixture.
- Scoop approximately 1 tablespoon of the mixture and roll it between your palms to form a ball. Repeat this process with the remaining mixture to create about 18 energy bites.
- Arrange the formed bites on a baking sheet lined with parchment paper. Place the baking sheet in the refrigerator for at least 20 minutes to allow the bites to firm up.
- While the bites are chilling, melt the chopped dark chocolate and coconut oil together in a microwave-safe bowl. Heat in 20-second intervals, stirring between each interval, until the chocolate is smooth and fully melted.
- Once the bites are firm, artfully drizzle the melted dark chocolate over them using a spoon or a piping bag.
- Return the drizzled bites to the refrigerator for an additional 10 minutes, or until the chocolate coating has completely set.
- Transfer the finished energy bites to an airtight container and store them in the refrigerator. They will remain fresh for up to 1 week.
