03 - Pour fruit juice into a small saucepan. Sprinkle gelatin evenly over the juice and let stand for 5 minutes to bloom. Heat gently on low, stirring constantly until the gelatin is completely dissolved. Add honey or agave syrup, stir well, and pour mixture into a small baking dish lined with parchment. Chill in refrigerator for 45 to 60 minutes until fully set.
