Sweet Sour Cherry Chicken Wraps (Print)

# Components:

→ For the Chicken

01 - 2 medium (approximately 300 g) boneless, skinless chicken breasts, thinly sliced
02 - 1 tablespoon olive oil
03 - 1/2 teaspoon salt
04 - 1/4 teaspoon black pepper

→ For the Sweet and Sour Cherry Sauce

05 - 1 cup (150 g) fresh or frozen pitted cherries, chopped
06 - 2 tablespoons honey or maple syrup
07 - 2 tablespoons rice vinegar
08 - 2 tablespoons low-sodium soy sauce
09 - 1 tablespoon tomato ketchup
10 - 1 teaspoon cornstarch mixed with 2 teaspoons water
11 - 1 clove garlic, minced
12 - 1/2 teaspoon grated fresh ginger

→ For the Wraps and Fillings

13 - 4 large flour tortillas (10 inches / 25 cm)
14 - 1 cup (60 g) shredded lettuce
15 - 1 small carrot, julienned
16 - 1/2 small cucumber, thinly sliced
17 - 2 green onions, thinly sliced
18 - Fresh cilantro or basil leaves (optional)

# Directions:

01 - Heat the olive oil in a large skillet over medium-high heat. Add the sliced chicken, season with salt and pepper, and sauté for 5–7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
02 - In the same skillet, combine the chopped cherries, honey or maple syrup, rice vinegar, soy sauce, ketchup, minced garlic, and grated ginger. Bring the mixture to a simmer and cook for 3–4 minutes, stirring occasionally.
03 - Stir in the cornstarch slurry and continue to cook for 1–2 minutes more, until the sauce thickens and the cherries begin to soften.
04 - Return the cooked chicken to the skillet and toss to coat evenly with the cherry sauce. Remove from heat.
05 - Briefly warm the tortillas in a dry pan or microwave. Lay each tortilla flat and evenly distribute the shredded lettuce, julienned carrot, sliced cucumber, and sliced green onions onto one half of each tortilla.
06 - Spoon the cherry chicken mixture over the vegetables. If using, add fresh cilantro or basil leaves. Fold in the sides of the tortilla and then roll up tightly.
07 - Slice each wrap in half and serve immediately.
