# Expert Advice:

01 -
  • It's ready in under 15 minutes of actual work, then the freezer does the heavy lifting while you relax.
  • The contrast of creamy, cold yogurt with crispy pistachios and juicy strawberries feels indulgent but surprisingly light.
  • Breaking it into shards at the table feels theatrical—people genuinely get excited about eating dessert that looks this beautiful.
02 -
  • Don't skip the parchment paper or you'll spend 20 minutes with a yogurt-covered spatula and genuine frustration.
  • Fresh strawberries are crucial—frozen ones release too much water and your bark becomes soggy instead of crisp.
  • The yogurt needs to be thick and full-fat Greek yogurt, not regular yogurt or whipped yogurt; the protein structure is what creates that satisfying crack when you bite down.
03 -
  • Toast the pistachios lightly in a dry pan for 2-3 minutes before chopping if you want deeper flavor, though raw works beautifully too.
  • A tiny pinch of rose extract or cardamom stirred into the yogurt elevates this into something entirely different and still deeply delicious.
