02 - Using a mandoline slicer or sharp chef's knife, slice cucumber, yellow squash, watermelon radish, carrot, and daikon into ⅛-inch thick rounds. Slice bell pepper into thin rings. Halve cherry tomatoes. Cut avocado in half, remove pit, then slice into thin, even segments for uniformity and visual symmetry.
