08 - 1 1/4 cups whole milk

09 - 2 cups unsalted butter, room temperature
10 - 6 cups powdered sugar, sifted
11 - 2 teaspoons vanilla extract
12 - 3 to 4 tablespoons heavy cream or milk
13 - Teal gel food coloring

→ Geode Decoration

14 - 2 cups rock sugar crystals (clear or white)
15 - Teal gel food coloring
16 - Edible gold leaf or gold luster dust
17 - Clear alcohol (such as vodka) for painting gold

→ Assembly

18 - Simple syrup (optional, for moistening cake layers)

# Directions:

01 - Preheat oven to 350°F. Grease and line three 8-inch round cake pans with parchment paper.
02 - In a mixing bowl, whisk together flour, baking powder, and salt until well combined.
03 - Using an electric mixer, beat unsalted butter and granulated sugar until pale and fluffy.
04 - Incorporate eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract.
05 - Alternately add dry mixture and milk to the batter, beginning and ending with dry ingredients. Mix until just combined.
06 - Divide the batter evenly among prepared pans. Bake for 28 to 32 minutes or until a toothpick inserted in the center comes out clean.
07 - Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
08 - Beat butter until creamy. Gradually add sifted powdered sugar, mixing well. Incorporate vanilla extract and add heavy cream as needed until smooth. Tint most of the buttercream teal, reserving a portion for crumb coating.
09 - Place rock sugar crystals in a bowl. Add teal gel food coloring and gently mix until evenly coated. If necessary, let crystals dry on parchment paper.
10 - Level cake layers if needed. Optionally, brush each layer with simple syrup for added moisture.
11 - Assemble cake layers with a thin layer of buttercream between each. Apply a crumb coat with reserved uncolored buttercream and chill for 20 minutes.
12 - Spread teal buttercream over the entire cake, using an offset spatula to smooth sides and top.
13 - With a serrated cake knife, carefully carve a wedge-shaped slice from the side of the cake to expose the interior.
14 - Spread a thin layer of buttercream inside the carved area. Press colored sugar crystals into buttercream to create a geode effect, blending shades for depth.
15 - Decorate the edges of the geode with edible gold leaf or paint with gold luster dust mixed with clear alcohol for a metallic finish.
16 - Add extra gold accents and a graduation topper if desired. Serve chilled or at room temperature.

# Expert Advice:

01 -
  • The geode slice design always turns heads and makes guests ask if it's store-bought.
  • This cake manages to be rich and moist, but never heavy, so everyone happily comes back for seconds.
02 -
  • If the buttercream warms up too much while decorating, it turns slippery—chill often or work in short bursts.
  • Letting the sugar crystals dry before pressing them into the cake keeps them sparkly instead of sticky.
03 -
  • Don’t rush chilling the crumb coat—it gives you a smooth canvas for teal buttercream.
  • Gold luster dust works wonders for highlighting rough geode edges and covering minor imperfections.
